Pumpkin Yogurt

Delicious and easy breakfast, snack or even dessert.

Preparation

  1. Mix 1 cup Greek plain yogurt with ¼ cup canned pumpkin.
  2. Sweeten with any type of sweetener desired (Splenda works well for those wanting to minimize sugar intake).
  3. Sprinkle with slivered almonds and a little high fiber cereal.

Very satisfying and a great source of protein (about 20 grams), calcium, beta-carotene and other nutrients. Canned pumpkin is a real nutrition powerhouse! Don't wait until Thanksgiving to enjoy it.
